This is one of the easiest and laziest recipe to have a healthy meal when you just dont want to do anything.


Cooked Rice ( 1/2 Cup)

Mixed vegetbles of your choice ( 1/2 cup – chopped )

Water 2 tbsp

Oil 1 tsp

Salt to taste

Curry Powder / Tandoori Masala / Pav Bhaji Masala – 1/2 tsp

Method :

For this recipe we will use leftover rice or you can cook rice in microwave (Microwave Vegan Cooking for One : Basic Rice)

In a microwave safe bowl add oil , chopped vegetables , spice mix ( curry powder / tandoori masala . pav bhaji masala) & salt , mix well so that oil and spices coat the vegetables.

Microwave the vegetables for 2 minutes , add 1 tbsp water and microwave for a minute ( check for tenderness) , if required microwave for a minute more.

Add the precooked rice to the bowl of vegetables , mix . Add 1 tbsp water and microwave for 90 secs.

Your yummy one pot meal is ready .
