Easy Vegan Punjabi Style Potato Curry in Microwave


Ingredients

  • 4 medium size potatoes peeled and cut into 1 inch cubes
  • 2 medium onions roughly chopped 
  • 2 medium tomatoes roughly chopped 
  • 1 inch Ginger roughly chopped 
  • 2 Green chillies 
  • 6 Garlic cloves
  •  2 tablespoons oil
  • Cumin seeds 1 teaspoon
  • Turmeric powder 1/4 teaspoon
  • Cumin powder 1 teaspoon
  • Red chilli powder 1/2 teaspoon
  • Coriander powder 2 teaspoons
  • Salt to taste
  • Water : 200 ml.
  • Coriander leaves for garnishing

Method

Put oil in a microwave safe bowl and add cumin seeds and tomatoes and microwave on HIGH for 10 minutes or till tomatoes are soft .

Add the rest of the ingredients including water in the bowl & microwave on High for another 10 minutes.

Garnish with coriander leaves and its ready to go.

ps : you can blend all this together and your vegan potato soup curry style is ready to serve.
