Makes 4 large dinner size serving, you can freeze it and use it for any meal.
1 tbsp olive oil
1 tbsp onion garlic paste
2 green chillies finely chopped or as per taste
4 cups chopped vegetables
1/2 cup tofu cubed
4 cup vegetable stock or Water
Salt to taste
1/2 tbsp Blackpepper
Warm oil in large soup pan. Add onion garlic paste and saute.
Add green chilles, saute.
Add chopped vegetables , saute. Add water/ vegetable stock and bring to simmer. Let it simmer for 10 minutes.
Add tofu. Stir. Cover and let it simmer for 10 minutes.
Add salt & black pepper
You are good to go.
