- 1/2 tbsp olive oil
- 1 tbsp onion, diced
- 4 cherry tomatoes halved
- 1 bread slice – torn into pieces
- 20 grams tofu
- pinch of nutmeg
- salt to taste
- pepper to taste
- 1/4 cup soy milk
In a microwave safe mug, heat oil for 30 seconds. Add onion. Heat on high for 30 seconds.
Meanwhile in a blender blend tofu, nutmeg, salt and soy milk until smooth.
Add the soy milk tofu blend , cherry tomatoes , bread to the onions in the mug. Microwave on high for 1 minute. Your vegan quiche is read to eat
